Minitara's Peach Crisp

1-1/4 cup flour |

1/2 cup light brown sugar |

1/2 tsp. cinnamon |
|
4 cups peeled, sliced Saunders Brothers peaches |
|
1 tsp. lemon peel |
|
|
|
1 cup sugar |
|
1/4 tsp. salt |
|
1/2 cup butter |
|
1 Tbsp. lemon juice |
|
Directions
Preheat oven 350°.
Combine flour, 1/2 cup sugar, salt, cinnamon and brown sugar. Cut in butter with 2 knives or pastry blender until coarse, resembling corn meal. Set aside. Combine peaches, lemon juice, lemon peel, 1/2 cup sugar and 1/4 cup flour. Spoon into a greased 9" square dish. Sprinkle flour mixture over peaches. Bake covered 15 minutes. Remove cover and bake 35-45 minutes longer.
Serving Information
Serve with vanilla ice cream.
