Grilled Corn, Sonya-Style!
Taking grilled corn to a new level!

1/2 cup mayonnaise |
|
Paprika |

|
Pepper |
|
Lime Juice |
|
Queso Fresco or other crumbly Mexican cheese |

Directions
Peel back the corn husks, remove silk, replace husks. Soak in water, about 30 minutes. Place on grill on low heat, spritzing with water occasionally. It takes about 1/2 hour to cook;you can check if it's done by the firmness of the kernels.
In the meantime, mix in a small bowl mayonnaise with some paprika, pepper of your choosing and lime juice to taste. Also crumble a plateful of cheese.
When the corn is done and cooled just enough that you can handle it, pull back the husks. Leave the husks attached; they make good handles! Then roll the ears first in the mayo mixture, and then in the cheese and serve.
